2016 Reserve Cabernet
This is the second vintage of our Reserve Cabernet. The grapes for this blend were selected from mature vines to capture the signature essence of the vineyard. In the winery, the clusters were gently destemmed and fermented in an open-top, with manual punch-downs. To add structure and enhanced dark fruit character, it was co-fermented with a small amount of Petit Verdot. The finished wine was composed entirely of free-run juice, and was aged in 57 percent new French oak barrels. The wine was gently handled with minimal gravity racking from barrel to barrel. It was aged using premium cooperage for a total of 18 months.
