2016 Estate Cabernet Sauvignon 'Block 11'
After picking at a modest 23.0° Brix, fermentation techniques included indigenous yeast, extended 15-day maceration and 100% whole berries. To accentuate their lush, rich fruit character, we gently fermented the grapes in open-top tanks before aging this Cabernet for 18 months as 100% free-run wine in 50% new, seasoned French Sylvain barrels.
To spotlight the rich diversity of our property, we occasionally craft small-production Cabernets from our finest blocks and barrels. These wines represent the pinnacle of our portfolio. This special limited-production Cabernet Sauvignon comes from the southern end of our Block 11. This block features clone 337 planted in low-vigor gravelly loam soils, yielding small clusters of intense grapes.
