2016 "Cooper Block" Pinot Noir
To enhance its natural complexity and rustic charm, this wine was fermented almost entirely as whole clusters. Punch downs were done infrequently, and were done gently by hand. A basket press was used and the free run wine was drained into one- and two-year-old French oak barrels and puncheons, and aged for 15 months.
This wine is made from a combination of clone 115 and Pommard grapes. The tiny-berried clone 115 contributes intense fruit notes to the wine, while the Pommard adds structure and minerality.
